I have successfully used Blacksn0w to jailbreak a fresh 3.1.2 install and subsequently added an unsigned tether profile for 02 UK payandgo to allow tethering

I have recently installed iTunes 9.0.3 and the tethering has now stopped. All of the original menu options are there it just won't tether.

I know the carrier profile was correct for my carrier as it worked prior to the ITunes update.

Does 9.0.3 kill tethering if so, do I have to re-intall 3.1.2 and re-jailbreak to get tethering back?

Never heard of this, are you sure you did not accidentally update to iPhone OS 3.1.3?

I have checked and I am running 3.1.2 (7D11) I still have tethering ON on the tethering page but the "INTERNET TETHERING" message that used to pulse on the title screen has gone.

My Apple Connection has gone from the Network connections box

Any suggestions
