Hi, I've got a 3G that's jailbroken to 3.1.2 and unlocked. I would like to sell this phone and keep it unlocked and jailbroken while getting rid of all my personal data. What is the best way to do this?

Secondly, I only have one computer with iTunes and it is now synced to my iPhone 4. I'm guessing I'll have to do some sort of restore to achieve the above, but will that cause iTunes to get the two phones mixed up?

Re-jailbreaking on a 3G is not a big problem.
So your best choice is to shift/option-click restore to stock 3.1.2 (in iTunes)
Then jailbreak with redsn0w and unlock with ultrasn0w again.
(you could also use Spirit to jailbreak - but you need a SIM car that can activate the iPhone via iTunes for that to work)

Another option (mac only) is to option-click restore with a pwnagetool custom IPSW. Then install ultrasn0w.

I have the same problem that OP has. Trying to restore an IPhone 3G that was given to me with my friend's personal information. Current firmware on the IPhone is 3.1.3 and I went ahead and jailbroke it and also ultrasnow'd it to unlock carrier. I downloaded the 3.1.3 firmware for IPhone 3G and tried to shift+restore but it's coming back with errors. What comes to mind is error #2003. I don't want to upgrade firmware to 4.1 so that I can be able to jailbreak and also unlock carriers. Anyone have ideas? I'm reading that Apple has to sign the firmware in order for me to restore the current 3.1.3 and of course Apple won't since they want me to upgrade to 4.1. Any help please?

That is only for restoring iOS 4.0 or higher and can be easily worked around on the 3G
