Blackrain is just perfect but....
the only ennoying bug is that if I have to reboot the iphone, then it starts in "restore mode" It's not really serious, because all I have to do is using BlackrainRC2 again and the result is the iPhone restarts this time like it was before. With nothing changed into the system, the apps, etc...
I would love to find a way to stop this "restore mode" to appear every time. If I am at home with my MBP so there is no problem. But if due to any reason the iPhone reboot when I'm out..... I'm screw.
I jaillbreaked the last last iPhone G3S with BB 05.11.07 and found no problem at all (except the one I talked)
Does anyone could help me to resolve this problem ?

There is no solution for this at the moment. Problem has been well discussed here already, so it pays to search before posting next time.
This is because Apple upgraded the hardware for 3GS iPhones sold since September to close the hole that the jailbreak developers were using to ensure an iPhone would boot properly after jailbreak. Until a new hole is found and blackra1n is updated you are stuck with running blackra1n each time you boot.
