I always thought that the shsh blobs was not necessary to restore a customs firmware.
After to have read some comments, I doubt with the apple tv 2.

Let say :

I have an apple tv 2 now with firmware 4.1 installed but without shsh blobs.

Can I use pwntool to do a 4.1 customs firmware and restore this custom firmware with iTunes ? I was really thinking that customs firmware passed through the shsh check...

SHSH blobs ARE necessary to restore custom firmware (on all iOS devices manufactured after september 2009 - except the iPhone 3G and iPod Touch 2nd generation)

In reality, this only applies to iOS 4.1 and higher (because no one has developed pwnagetool bundles to support custom IPSW for new bootrom devices on older iOS versions)
