If you perform a factory restore, your AppleTV will restore itself to the OS that it was originally on out of the box. If this was 1.0, then you are stuck with 1.0 or 2.0. If it was 1.1, you are stuck with 1.1 or 2.0. The only way to go from 1.0 to 1.1 is if you have a 1.1 image. If so, you will have to manually re-image the HD

I too restored cuz 2.0 is shit, but now I have 1.0. I've downloaded the 1.1 image from Apple at http://mesu.apple.com/data/OS/061-29...94-5248-45.dmg

So how the hell to I update back to 1.1?

You could try restore the 1.1 image back to /dev/disk1s1 with disk utility or perhaps dd. I tried this from my "minimal osx usb flash disk install" and it didn't work. But i found out that i can't mount dmgs as well. So maybe it will work for you.
